Last time I did hardcore, I had my 9mm pistol, lever action shotgun and scoped hunting rifle, carried about ten full reloads worth of regular rounds for each, picked one specialized ammo type and carried five reloads worth and had enough room for my armor, food, water, a few doctor bags and still had room to pick up some other stuff for repairs or to sell later. You'll have to work that down to two or three and limit how much ammo you carry for each. Expect to not be carrying around half a dozen guns with thousands of rounds worth of each ammo type for each weapon.
